Healthy, Vegan 3 Ingredient Oatmeal Raisin Cookies {GF, Vegan, Paleo, Dairy-free, Easy to make}

Looking for the PERFECT sweet treat to end your night that’s healthy & easy to make? Well look no further because these mini oatmeal raisin cookies are gluten-free, vegan, paleo and dairy-free. They can be made with raisins or chocolate chips and are the easiest 3 ingredient DELICIOUS cookies!

This recipe pairs perfectly with my paleo oatmeal cream pie recipe! You can easily use this cookie base recipe and then just follow the paleo cream filling recipe, fill the cookies, and voila! You have a healthy cookie sandwich that’s downright addicting!

To make these all you need is gluten-free oats, bananas and raisins or chocolate chips, depending on your preference. Mix together, scoop, bake and ENJOY 🙂

Ingredients

Yields about 12 cookies

  • 1 cup gluten-free oats
  • 2 bananas, very ripe
  • 1/2 cup raisins or chocolate chips
  • Optional: 1 tbsp cinnamon

Directions

  1. Preheat oven to 350F degrees
  2. Spray a baking sheet with cooking spray or line with parchment paper
  3. In a bowl combine all ingredients in a bowl, using a tbsp measuring spoon, scoop dough onto baking sheet, lightly press down, repeat with remaining dough.
  4. Bake for 18-20 minutes or until cookies are set and bottoms are slightly browned.
