
No bake Vegan & Gluten-free Chocolate Chip Oatmeal Bars {Dairy-free, Vegan, Gluten-free, Healthy}
No bake it’s easy as cake! These no bake chocolate chip oatmeal bars are gluten-free, vegan, dairy-free, healthy, quick to make and easy to finish off because they are SO GOOD! I was playing around in the kitchen the other night and was in the mood for something SWEET and CHOCOLATEY and decided to try my whisk at another no-bake recipe!
You guys have been loving my no oven required recipes! Previously on my blog I have shared these no bake GF & vegan protein peanut butter bites as well as these no bake cookie dough bites. Other past no bake recipes on my blog are raw vegan pistachio bites and this no bake edible cookie dough. Now, I have another DELICIOUS recipe to add to the bunch!!!
To make these all you need are gluten-free rolled oats, cocoa powder, maple syrup, coconut oil, crunch almond butter and chocolate chips – I use vegan, gluten-free, nut-free, dairy-free, soy-free chocolate chips by Enjoy Life. These oatmeal bars are the PERFECT sweet treat to end your night because they require minimal ingredients and time. To all my chocolate lovers, you’re gonna LOVE this no bake dessert! 🙂

Yields about 10 bars
- 3 cups gluten-free rolled oats
- 3/4 cup cocoa powder
- 3/4 cup maple syrup
- 1/4 cup coconut oil
- 1 cup crunchy almond butter – crunchy is recommended but smooth will work if this is all you have on hand.
- 1 cup enjoy life chocolate chips(these are my FAVORITE!) or use your favorite vegan & gluten-free ones
- Optional: 1/2 cup melted chocolate with 2 tbsp coconut oil for a chocolate drizzle on top of bars
Directions
- Line an 8X8 baking dish with parchment paper or tin foil (if this is all you have on hand)
- In a bowl add cocoa powder, maple syrup, coconut oil and almond butter. Mix well. Add more maple syrup if needed.
- In a separate bowl add gluten-free rolled oats and chocolate chips, add in almond butter mixture. Mix well until completely incorporated.
- Add dough into your baking sheet, press down until compact. Optional: top with melted chocolate.
- Refrigerate for 30 minutes. Cut with a knife once hardened and ENJOY 🙂
