Paleo, Gluten-free Vegan Oatmeal Cream Pie’s -Healthy Dessert {Paleo, GF, V, DF, No-refined sugars, low calorie}

One of my favorite desserts as I child was Little Debbie’s oatmeal cream pies. To say I was obsessed with them would be an understatement. But, as you all known, about 8 years ago I was diagnosed with a gluten allergy and most recently celiac (3 years ago), so it’s been a long time since I’ve enjoyed a Little Debbie. And the foodie in me was itching to try my hands at a new recipe so I went about baking my own! Just WAY HEALTHIER!

These mini oatmeal cream pies are gluten-free, vegan, paleo, low calorie, no refined sugars and are the most DELICIOUS healthy dessert. I know I share lots of recipes on here, so this is a bold statement, but this dessert may just be my new favorite. It’s so easy to whip up, store’s perfectly for up to 3 days and is a crowd favorite. My friends couldn’t even believe these were free of the common allergens, they quickly gobbled them up and even asked for more. Which is fine because they only take a few minutes to prepare!!

What to use

The oats I used are from Trader Joes and they are their GF oats. Bob’s Red Mill also makes GF Rolled Oats which are another one of my favs. This recipe can be made non paleo by switching out the coconut butter for a vegan cream cheese & powdered sugar. These cookies store perfectly for up to 3 days. Seal in an airtight container, they will remain soft and delicious! 🙂

Ingredients

  • Cookies:
  • 1/2 cup gluten-free oats
  • 1/2 mashed banana
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp maple syrup
  • 1 tbsp coconut sugar
  • Filling:
  • For paleo version use: 3/4 cup coconut butter (not liquid), 2 tbsp maple syrup, 1 tsp vanilla extract
  • For non paleo version use 3/4 cup Kate Hill cream cheese (or your favorite vegan cream cheese), 1/4 cup powered sugar & 1 tsp vanilla extract

Directions

1.Preheat oven to 350F

2. For the cookies combine oats, mashed banana, almond flour, baking powder, baking soda, maple syrup and coconut sugar in a bowl, mix well.

3. Scoop out dough and bake for 12-15 minutes. Dough will be soft, this is okay.

4. While cookies are baking make the filling

5. Paleo filling: For paleo version add coconut butter (not liquid), maple syrup & vanilla extract to a bowl. Mix, texture will be a frosting consistency.

6. Non paleo filling: Combine Kate Hill cream cheese, powdered sugar & vanilla extract until well mixed.

7. Once cookies are cooled frost, top with another cookie & ENJOY 🙂
