Raw Vegan Twix Bars – Caramel filling with a touch of sea salt {Gluten-free, Dairy-free, Raw, Vegan, Paleo, Healthy Dessert}

A few weeks ago I was talking with my friend who is a 100% raw vegan (amazing right!) and she was telling me about this cafe she eats at that sells raw vegan takes on popular candies – twix, butterfingers, brownies, chocolate chip cookies, heath bars…, and I was intrigued!

About 2 years ago I went through a period where I was making these raw pistachio date bites & coconut bites 24/7! Seriously, these recipes are some of my favorites I’ve ever shared! Then I went away to college and my baking and cooking adventures had to take a back burner. But, since I’ve been home, all the baking and cooking has been going on and this recipe, after hearing about my friends amazing story of them, was another dessert I just had to tackle.

These raw vegan twix bars are gluten-free, vegan, raw, plant-based, dairy-free, paleo, healthy desserts that taste like little bites of heaven. The base layer is a plant-based shortbread crust topped with a date caramel layer, the perfect fudgey raw chocolate and finished off with little sprinkles of Himalayan salt. This dessert is my new FAVORITE things because of how easy and healthy it is to make. Plant-based eating never tasted so good!!!

Ingredients

  • Biscuit:
  • 1 1/2 cups almond flour
  • 3 tbsp coconut oil
  • 5 pitted Medjool dates
  • Caramel layer:
  • 12 pitted Medjool dates
  • 1/4 cup raw peanut butter
  • 2 tbsp oat milk
  • 1 tsp salt
  • Chocolate topping:
  • 1/2 cup cocoa powder
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil
  • Toppings:
  • Himalayan salt (optional but recommended)

Directions

  1. Line an 8X8 pan with parchment paper (very IMPORTANT!). You will use this pan to shape your bars.
  2. In a blender start with the base layer – add almond flour, coconut oil & dates. Blend until a dough forms then press into the bottom of your lined baking sheet. Place in the freezer while you are preparing the next layer.
  3. Clean out the blender and make the caramel layer – medjool dates, raw peanut butter, oat milk and salt. Blend until thick and creamy (takes a few minutes). Remove from blender and spread evenly on top your base layer. Place in the freezer.
  4. To make the chocolate topping – in a saucepan add maple syrup, cocoa powder and coconut oil, mix for 1 minute over low heat until chocolate sauce comes together. Spread over top your caramel layer, sprinkle some Himalayan salt and place pan in the freezer for no less then 30 minutes to set.
  5. Cut into twix bar size pieces and enjoy!
