The best gluten-free gooey chocolate chip cookies ever! (dairy-free options)
Chocolate chip cookies are a simple yet immensely popular cookie. For years I have been on the search for the perfect recipe that captured everything I wanted them to. They needed to be gooey, chocolatey, buttery and have the perfect soft center. I have made other cookie recipes such as my famous gluten free toffee and chocolate ones, oatmeal raisin, paleo almond butter chocolate chip cookies and even my paleo take on chocolate chip cookies. But it’s been a few months since I’ve made cookies so I wanted to tackle a new challenge. And although it took a few tries, I eventually found the secret that seriously makes the best cookies! How to make them – the secret tips
These cookies are very easy to make an only require 10 ingredients that can be found in pretty much any pantry.
Tip #1: It’s important to make with milk chocolate chips as opposed to dark chocolate or semi-sweet. I’ve found that the milk chocolate chips melt better in cookies as well as giving the center a gooey and delicious texture.
Tip #2: The second important tip when making these cookies is the use of softened butter in the dough and using butter to line the baking trays. Compared to melted butter, softened butter helps the dough stay together better resulting in fluffier cookies.
Tip #3: You will notice how I don’t use light brown sugar in this recipe because dark brown gives the cookies a more rich flavor. I highly recommend trying them with it as my recipe outlines because this sugar adds a more molasses and rich flavor to cookies that goes perfectly with the butter and chocolate. I’ve also found that the cookies bake better and softer with dark brown sugar.
Tip #4: Refrigerating your dough will not only help all the ingredients stay together better but it also helps them bake better. The time in the fridge allows everything to settle so that when you bake them they will stay together perfectly and taste amazing! Try this tip out with your other cookie recipes as well! 🙂

Substitutions
This recipe contains two forms of dairy. One is in the milk chocolate chips and the other is in the butter. If you are unable to consume dairy then you can replace it with your favorite dairy-free butter such as earth balance or another brand. The same goes for the chocolate chips, replace with a dairy-free or vegan brand. If you are vegan then you can replace the eggs in this recipe with your favorite vegan egg replacer. I have not tried this recipe without eggs so I am unsure as to how it will come out. But if you do try it then tell me how it came out! Ingredients
- 2 1/2 cups gluten-free flour
- 1 tsp baking soda
- 1 tsp salt
- 1/4 cup white sugar
- 1/2 cup dark brown sugar
- 2 eggs (use vegan egg replacer is making recipe vegan)
- 1 tsp vanilla extract
- 10 tbsp unsalted butter – softened (use dairy-free butter if making vegan/dairy-free)
- 1 cup milk chocolate chips (replace with non dairy/vegan option if making these cookies vegan or dairy-free

Directions
- Preheat oven to 350 F degrees
- Combine gluten-free flour, baking soda and salt, mix
- Add in sugars, mix until well incorporated
- In a separate bowl combine eggs and vanilla extract. Add to flour bowl. Mix.
- Add in softened butter either mixing by hand or with an electric mixer on the low speed. Then add in chocolate chips.
- Refrigerate dough for 3-4 hours in a covered bowl. Then bake.
- Grease a cookie sheet with butter (IMPORTANT!) and make 1 tbsp or bigger size cookie dough balls. Bake for 10 -15 minutes. Check around the 10 minute mark to make sure they don’t overcook. They will be puffy and lightly browned on the top with a gooey and soft middle. 🙂
