Vegan, Gluten free & Paleo Sweet Potato Soup

Soup is one of my favorite dishes to make and eat during the winter. It’s warm, filling and there is such a large variety of ingredient combinations you can make it! Who knew combining peas and ham would create such a frenzy 🙂 …. or perhaps carrots and ginger for a nice detox…. even pumpkin can be added for a nice fall dinner.

For today’s recipe I am bringing to the blog one of my favorite veggies, sweet potatoes. Everything from oven baked seasoned sweet potato fries, sweet potato & veggie bowls and paleo whole 30 BBQ chicken & sweet potato bowls are just a taste of the delicious dishes I have made with this veggie and today’s recipe is joining the group.

All you need for this dish is a few sweet potatoes, yellow onion, turmeric powder, chili powder, a dash of olive oil and you are set. Bake, Puree, Serve. 🙂 How simple yet delicious.

Ingredients

  • 3 sweet potatoes, peeled & diced
  • 1 yellow onion, diced
  • 1 tbsp chili powder
  • 1/2 tbsp turmeric powder
  • Pinch of salt
  • 1 tbsp olive oil
  • Sprig of oregano (garnish)
  • 1/4 cup water (add more if soup is too thick)

Directions

  1. Preheat oven to 425 F.
  2. Peel sweet potatoes and dice. Repeat with onion.
  3. Put veggies on a baking tray, add seasoning and olive oil (minus oregano sprig) tossing to ensure even coating.
  4. Bake for 20 minutes or until sweet potatoes are soft.
  5. Remove from oven and then transfer to a blender, add water and pulse until smooth adding more water if necessary.
  6. Pour into a bowl, garnish with a sprig of oregano and enjoy. 🙂
