Paleo, Gluten Free & Vegan Chocolate Chip Cookies – Heavenly bites

Over the years of having my blog I have shared many different versions of the classic chocolate chip cookie- a simple gluten-free chocolate chip cookie recipe, and a paleo version. But what I had yet to do was make a Vegan, Paleo & Gluten free version, that was until today! And after weeks of hard work I am finally ready to present to you a 100% vegan, paleo and gluten free chocolate chip cookie recipe that lives up to the classic gluten & dairy filled version. 🙂

Not only is this cookie free of 3 of the top allergens – gluten, eggs & dairy, but it is also a healthier version so you won’t need to feel guilty when having 2 or 3 as a late night snack because you definitely will be going in for 2nds and 3rds!

I think that this may be one of my favorite recipes that I’ve shared on here so far! Bold statement, I know! But once you get a bite of these cookies I firmly believe that you will agree. 🙂

Ingredients

  • 6 TBSP melted coconut oil
  • 1/2 cup coconut sugar
  • 2 TBSP oat milk
  • 2 tsp vanilla extract
  • 2 cups almond flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup Enjoy Life Chocolate Chips – you can use morsels or chips

Directions

  1. Preheat oven to 350F and line a cookie baking tray with parchment paper or cooking spray
  2. In a large bowl add almond flour, coconut sugar, baking soda, baking powder and salt
  3. In a separate bowl add coconut oil, oat milk, and vanilla extract, mix and then add to dry ingredients. Stir until combined.
  4. Add in your chocolate chips, use more or less than the measurement I provided. If you like them extra chocolatey then use MORE!!!! 🙂
  5. Bake for 8-10 minutes, don’t go over because then they will not be as soft. Let them COOL for 5 minutes before eating or else they will fall apart. Trust me, it will be worth the wait!
