No bake GF & Vegan Protein Peanut Butter Cookie Bites: Healthy snacks {No refined sugar, healthy, paleo}

No bake it’s easy as cake! These EASY to make gluten-free, vegan, no-refined sugars, healthy, paleo protein peanut butter bites are my new favorite thing. They are low calorie and the perfect sweet treat to end your night or snack on throughout the day.

Since you all loved my no bake gluten-free, vegan & paleo cookie dough bites, I wanted to create another recipe for you guys, enter these protein bites. The inside is like a soft sugar cookie (BUT HEALTHIER!), made with orgain vanilla protein powder, coconut flour, coconut oil, maple syrup, salt, peanut butter and coconut sugar, these bites are filled with healthy plant-based ingredients to keep you feeling your BEST! To take these up a notch you can even dip them in melted enjoy life mini chocolate chips and sprinkles or coconut sugar!

These bites store perfectly for up to 4 days and can be taken anywhere for anytime of the day.

You can replace the orgain protein powder with your favorite if this is all you have on hand. Just make sure it’s gluten-free, vegan & plant-based. Same goes for the chocolate chips, use enjoy life or your favorite vegan, GF brand.

Ingredients

  • 1 scoop vanilla Orgain protein powder – code RUNNINGWITHT saves you 30%, or your favorite protein powder
  • 1 cup coconut flour
  • 2 tbsp coconut oil
  • 4 tbsp maple syrup
  • pinch of salt
  • 7 tbsp peanut butter
  • 1 tbsp coconut sugar
  • 1 cup enjoy life chocolate chips (optional) – to add into the dough or melt and coat your bites in.
  • 1/4 cup coconut sugar (optional for rolling)

Directions

  1. In a bowl mix protein powder, coconut flour, coconut oil, maple syrup, vanilla extract, coconut sugar and salt together until a dough forms. Add in chocolate chips (optional).
  2. Using a tbsp, scoop dough into balls, roll in coconut sugar (optional), repeat with remaining dough. Place in the fridge for 20 minutes to harden.
  3. You can also melt some enjoy life chocolate chips along with coconut oil and roll your bites in them for a sweeter touch.
