Jump to RecipeI am a huge promoter of snacking throughout the day and finding snacks that fit your lifestyle. They can make all the difference in how you feel, your energy levels, and cravings. Whole foods has a great selection of healthy snacks for every lifestyle (gluten-free, paleo, vegan, healthy…)!
Some of my favorite savory treats can be found here, but, sometimes I am in the mood for something a tad sweeter and these muffins fill in that craving perfectly.
Banana bread is one of my favorite desserts but I find that for me, eating muffins is a more practical snack for on the go fueling than having to pack a slice of bread. So, I condensed one of my favorite banana bread recipes, swapped out a few ingredients and came up with this delicious muffin creation that is perfect for storing so you grab on the go, or for post run fuel, or as a tasty late night snack. 🙂 Plus since these muffins are HEALTHY they are perfect to eat during our time inside #socialdistancing and keep us on track with our healthy lifestyles. Ingredients
- 1/2 cup coconut flour
- Pinch of salt
- 1/2 tsp baking soda
- 1/4 cup paleo chocolate chips – Hu is a great brand (optional)
- 1/4 cup walnuts (optional)
- 4 eggs
- 1/4 cup coconut oil
- 1/4 cup honey
- 2 bananas, mashed
- 1 tsp vanilla extract
Directions
- Preheat oven to 350 F. Grease a 12 cup muffin tin.
- In a mixing bowl combine dry ingredients (coconut flour, salt, baking soda, chocolate chips, walnuts), mix.
- In another mixing bowl combine wet ingredients (eggs, oil, honey, bananas, vanilla extract), mix.
- Combine wet ingredients into dry bowl, mix.
- Spoon batter evenly into 12 cup muffin tin.
- Bake at 350 F for 20 minutes or until fully cooked in center (insert toothpick and if it comes out clean then they are cooked)
- Cool muffins for 10 minutes and ENJOY 🙂
