Hearty Meat, Potato & Veggie Stew {gluten-free, dairy-free, healthy}

This hearty meat, potato and veggie stew is just what the doctor ordered! Packed full of flavor from the perfectly seasoned beef and fresh taste of the veggies combined with a hint of fresh herbs & seasonings, it’s my new GO TO recipe for the Winter. I don’t know about you, but being indoors so much these past few months, especially during the cold weather we are experiencing now, soups and stews have become my new go to’s. As well as chocolate chip cookies and cakes. BIG sweet tooth over here! So, I have to cut it with something savory every now and then.

A few nights ago I was sitting in my lounge area and was trying to think up something to make for Sunday night supper. So, I took a trip to the fridge, saw a bunch of ingredients and thought up a recipe to make – a stew packed full of veggies, starches and proteins. Voila, this recipe was born! It’s gluten-free, dairy-free, healthy and 100% delicious. You can easily swap out the veggies I use for your favorites or add more on top of the ones I use. Cuddle up on the couch with a bowl of this delicious stew and your favorite book or movie and relax into the weekend.

Ingredients

  • 1-2 lbs lean beef stew meat
  • 32 oz beef stock
  • 2 tbsp olive oil
  • 1/2 yellow onion, diced
  • 2 tbsp Italian seasoning
  • 1 clove garlic, minced
  • 1 tsp beef bouillon
  • 1 large carrot, chopped
  • 1 head Bok Choy, chopped
  • 1/2 head lettuce, chopped
  • 8 small red potatoes, diced

Directions

  1. Add stew meat to large skillet with olive oil, minced garlic & Italian seasoning. Cook until well done. Transfer to a bowl leaving leftover juices behind.
  2. While meat is cooking bring a pot of water to a boil and add in diced potatoes. Cook until soft.
  3. Chop 1/2 yellow onion and add to the same skillet meat was cooked in. Saute until caramelized, about 5 minutes
  4. In the same skillet add back in beef, beef stock, beef bouillon, chopped carrot, Bok Choy & lettuce
  5. Once potatoes are done, rinse with cold water and set aside in a bowl.
  6. Bring stew to a boil and reduce to medium-low heat for 1 hr. Add more beef stock is needed. Add in potatoes last hour of cooking. Make sure beef is tender.
  7. Serve immediately over jasmine rice (optional). ENJOY 🙂

Storage & Reheat

Keep for up to 4 days in a airtight container. To reheat add some water and bring to a boil and reduce to medium until meat is fully warmed.
