
Gluten Free Mini Cheesy Garlic Bread
If you should know one thing about me it’s that I love pizza. Sicilian, plain, ziti, veggie, calzone, pepperoni, garlic….. (of course all gluten free :), there are very few types that I don’t like. And out of all those I would have to say my favorite by far is garlic. There is something special about garlic bread pizza that just gets me every time. So I thought I would share my all time favorite cheesy garlic bread recipe.
This recipe can be made with or without sauce, depending on your preferences and can be made using a large baguette or smaller ones like in this recipe.
All you need is gluten free Udi’s hot dog rolls, garlic, butter, mozzarella cheese, parsley (dried or fresh) and sauce (if using). How easy! Combine your garlic and butter. Top on rolls, add sauce (if using) and add a generous amount of cheese. Bake and eat. This recipe is perfect to dress up or dress down for a casual night at home or for something a bit more special like a party or Holiday dinner. Whatever the occasion you are sure to Fall (wink) in love with this delicious and easy to make appetizer/dinner course.

Ingredients
- 1 pack of Udi’s gluten free hot dog rolls – use 2 rolls or more if making for larger crowd
- 1/2 cup unsalted butter
- 2 cloves garlic
- 1/3 cup of your favorite sauce – make sure it’s gluten free
- 1 pack of mozzarella cheese

Directions
- Preheat oven to 425 F and line two baking trays with tin foil
- Take your 2 hot dog rolls and separate them, so now you have four halves.
- In a bowl combine 2 garlic cloves, 1/2 cup unsalted butter and 2 tbsp fresh or dried parsley . Mix until well combined
- Put your garlic and butter mixture on top of bread (a thin layer, a little goes a long way), add sauce (if using) and top with mozzarella cheese.
- Bake for 5-10 minutes or until the cheese is melted and the bread is golden on the sides. Serve immediately with sauce or by itself. ENJOY 🙂
