Gluten Free & Dairy Free Funfetti Cake

Who else loves cake! I know I am not alone in my unhealthy obsession with sweets 🙂 . I have recently been loving making this cake recipe on the weekends because it has been an absolute hit with my friends and family. I think it’s because of the sprinkles, they make the inside of the cake so colorful it’s like eating a rainbow. 🙂

If you love cake then you are going to love my take on the classic funfetti cake. This recipe is gluten free and dairy free and made with my favorite organic vanilla frosting from Simple mills! Then to top the cake I use rainbow sprinkles (gluten free) and you can it a night with a slice or two (most likely 3 🙂 ) of this cake!

If you’re looking to make this a tiered cake then all you have to do is double or triple this recipe, frost, sprinkle and you’re done!

Ingredients

  • 1 1/2 cup GF flour
  • 1/2 cup + 1 tbsp sugar
  • 1 tsp baking powder
  • Pinch of salt
  • 2 eggs
  • 1/2 cup oat milk
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup rainbow sprinkles
  • Dairy free vanilla icing

Directions

  1. Preheat oven to 350 F
  2. In a bowl combine flour, sugar, baking powder and salt. Mix
  3. In another bowl add eggs, vanilla, oat milk and coconut oil. Add wet to dry. Add sprinkles. Mix well.
  4. Line an 8X8 baking tray with cooking spray and pour in batter. Bake for 22-25 minutes or until it’s cooked through.
  5. Add icing and more sprinkles once the cake is COMPLETELY COOLED OFF! 🙂
  6. Slice, serve and enjoy.
