Paleo apple pie {paleo, gf, df, soy-free, sugar free, healthy}

Calling all paleo readers! If you are looking for the perfect paleo apple pie to make this fall then look no further! This recipe is 100% healthy leaving you feeling 100% happy.

Over the past few weeks i’ve perfected this recipe and improved the texture of the crust and last night it finally came out perfect, which means it’s finally time to share.

Apple pies are my favorite of the pies. There is something so delicious about a buttery crust and the crunch and sweetness of the apples, YUM! But I know the struggles people who follow the paleo lifestyle have because there’s not a huge selection of paleo pie recipes which actually taste good, which is why I am over the moon happy for you to try mine. Make it for friends, family, on Thanksgiving day, or for yourself. πŸ™‚ Whatever the occasion, I guarantee people will be going back for more.


Ingredients

Crust:

  • 1 large egg
  • 1/2 cup not melted coconut oil
  • 1 cup almond flour
  • 2/3 cup tapioca flour
  • 1/2 tsp salt

Filling:

  • 4 large apples- peeled, cored, and sliced
  • 1/4 cup + 4 tbsp maple syrup
  • 1 tsp lemon juice
  • 2 tsp cinnamon
  • 1 tsp apple pie spice (optional)- gives a stronger traditional apple pie taste.

Directions

  1. Preheat oven to 375 F. Prepare pie dish and grease with coconut oil
  2. Crust: In food processor or blender add all crust ingredients except egg. Pulse several times until crumbly then add egg and process until a dough forms
  3. Transfer dough to pie dish and press it into the pie dish until the crust is up to the edge.
  4. Use fork to pierce dough all over to prevent it from rising during baking.
  5. Bake at 375 F for 10-12 minutes until lightly browned. Remove from oven and cool 10-15 minutes while preparing filling.
  6. Reduce the oven to 350 F. Transfer sliced apples to mixing bowl and add all filling ingredients. Toss until everything is evenly distributed.
  7. Place apple slices in bottom of pie crust arranging in circular motion by slightly overlapping them (refer to picture if need be). Pour remaining sauce over the apples.
  8. Bake at 350 F for 15-20 minutes uncovered until the apples appear tender and the crust is golden brown.
  9. Remove pie from oven and cool 20 minutes before indulging.
