Gluten free & Vegan Tempeh BLT Sandwich

Although I am not fully vegan anymore I have been making an effort to include more plant-based recipes into my diet because of how much I enjoy them. If you asked me a year ago if I liked tofu, I would have responded with a “YUCK!” Fastfoward a year, after learning new recipes with it and its counterpart Tempeh, I am happy to say that tofu isn’t “Yuck” anymore but in fact really good!

One of my favorite recipes to make with it would have to be these vegan & gluten free β€œcheesy” tofu cutlets with vegan spicy mayo dipping sauce or these vegan tofu, sweet potato & veggie Bowls {V, GF, Paleo, Healthy}. I’ve also made one of my most popular recipes, this curry and honey mustard baked chicken {gf, df, healthy, vegan, paleo options} using tofu instead of chicken. In today’s day and age there are so many vegan options for meat and dairy and they are getting better by the second. So, in the spirit of sharing vegan dishes I of course had to add one of my favorites that I’ve been eating nonstop these past few weeks.

If you love sandwhiches, just like Joey did :), then you need to try this recipe out. In fact, I think Joey Tribbiani would be proud of this re-creation even though we all know how he feels about vegan food. Nonetheless, using tempeh instead of bacon is one of my favorite substitutions to date and it’s way healthier for you so you can enjoy it multiple times a week! πŸ™‚

This recipe yeilds 1 sandwhich. Double or triple the ingredients if making more than 1.

Ingredients

  • 2 pieces of gluten-free & vegan bread
  • 1 block of tempeh- only use 2 slices of it (for the “bacon”)
  • 1 small piece of lettuce
  • 1 slice of tomoato
  • 1 tbsp vegan mayo – my favorite is veganaise
  • 1 tsp gluten-free soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 tbsp olive oil
  • 1 slice of avocado (optional)

Directions

  1. Pop 2 slices of bread into the toaster
  2. Slice your tempeh into 2 small strips. Store the remaining tempeh back in the fridge for another sanwhich tomorrow! πŸ™‚
  3. Add to pan along with olive oil, gluten-free soy sauce, chili powder & garlic powder. Toss to coat, then cook for 5 min on each side on medium-high or until it’s nice and crispy.
  4. Take toast out, spread your vegan mayo, tempeh, lettuce, tomoato, avocado slices (optional), mayo on the other piece of toast and you’re done!
  5. So simple and easy and healthy πŸ™‚ Enjoy!

Ingredients
