Easy & Healthy Roasted Potato Recipe {Gf, Vegan}

Last night I was playing around in the kitchen and came up with this EASY roasted herb potato recipe. The outside is a crispy potato coated in olive oil, thyme seasoning, Italian seasoning, rosemary, pepper and salt! They are so delish and so quick to prepare. Eat them for breakfast along side a savory omelette, lunch with my favorite vegan sandwich or for dinner alongside my famous baked chicken recipe.

This recipe is gluten-free, vegan, dairy-free and healthy. It stores perfectly for up to 2 days in an airtight container. To reheat quickly pop in the oven for a few minutes to crisp up and voila, you’re all set! Pair it with some BBQ sauce, ketchup or eat plain, these mini potatoes are just that good!

Ingredients

  • 8 mini potatoes
  • 1 tbsp thyme seasoning
  • 2 tbsp Italian seasoning
  • 1 tbsp rosemary
  • A few sprinkles of pepper
  • 2 pinches of salt
  • Olive oil (enough to lightly coat the potatoes)

Directions

  1. Preheat oven to 350F
  2. In a bowl add all ingredients, toss with potatoes until well coated. Transfer to a skillet and bake for 25-30 minutes or until crispy.
  3. ENJOY 🙂
