Vegan & Gluten-free Pasta with Goat Cheese, Feta, Basil & Honey Mustard Dressing

I started eating this way because I was looking to try something new and embark on an adventure creating dishes that are vegan and seeing how I felt (digestion). Although I haven’t been going at this for long, it’s safe to say that I truly love it. For starters my meals digest very easy, the food is delicious and I can still make all my favorite sweet treats but just change them to VEGAN or RAW VEGAN (like my favorite carrot cake)!
Today’s recipe is brought to you by my dad since he’s the one who created it many years ago. I’m not sure why it’s taken me this long to share it but here goes. 🙂 Before I was vegan I used to make this recipe with regular cheese (goat cheese, feta & honey mustard) but since I no longer eat animal products I use these two amazing recipes I found! This is the vegan goat cheese recipe I use and this is the vegan feta cheese. Neither are my own recipes but hopefully once enough practice is under my belt I will create my own. 🙂
Over the past few weeks of my experimentation with veganism, I’ve come up with a number of delicious recipes such as these vegan Italian stuffed peppers and my take on vegan copycat Chinese fried rice. Plus I’ve dabbled in desserts and created my favorite raw vegan coconut date bites, raw vegan pistachio bites and these no bake gluten-free cookie dough bites. And don’t worry because I have dozens more recipes coming your way! 🙂
This recipe is healthy, vegan, and gluten-free but you can easily make with non-vegan ingredients or non-gluten free ingredients to fit your needs. It’s the perfect Summer dish for the family to enjoy and can be stored in the fridge for up to 3 days. It’s light, easy to make and is sure to become a new family favorite.

Ingredients
- Make this vegan goat cheese recipe or use your favorite
- Make this vegan feta cheese recipe or use your favorite
- 1/4 cup basil – chopped up
- 1 box gluten-free pasta
- 15-20 kalamata olives – diced
- Pepper
- Salt
- Vegan Honey Mustard Dressing

Directions
- Make the goat cheese and feta cheese. Then come back to this recipe.
- Boil water and cook pasta until al dente.
- Drain water and run pasta under cold water until cool. Then add to a bowl.
- Add all your ingredients- chopped up basil, diced kalamata olives, pepper, salt, goat cheese, feta cheese, and however much of the vegan honey mustard dressing you want.
- Toss until combined. ENJOY 🙂
