5 Minute, 5 Ingredient Vegan & Gluten-Free Chocolate Pudding
I’m a big fan of quick, easy and healthy desserts to make and this chocolate pudding hits this right on the head! It’s gluten-free, dairy-free, vegan and takes only 5 minutes to make!
As a kid I was always in love with the instant pudding mixes but they’re not the healthiest so I wanted to create a similar version that was free from the top allergens and was healthy to indulge in. You only need 5 ingredients to make this 5 minute dessert! Sugar, cornstarch, oat milk (or favorite dairy-free milk), enjoy life chocolate chips, and vanilla extract. Mix them all together and you get the best of both worlds!

Ingredients
- 2 tbsp sugar (white)
- 1 tbsp cornstarch
- 1 cup oat milk (or favorite dairy-free milk alternative)
- 1/3 cup enjoy life mini chocolate chips – shop
- 1 tsp vanilla extract
Directions
- In a small saucepan combine sugar, cornstarch and oat milk. Heat over medium heat until it boils, let it boil for 2-3 minutes until it thickens – stir occasionally.
- Add in chocolate chips, stir until melted.
- Remove from heat and add in vanilla extract.
- Eat right away or let refrigerate for 1 hr to cool. Top with fresh fruit (optional). ENJOY 🙂
