Gluten-free & Vegan Cinnamon Roll Pancakes {GF, V, DF}

The perfect breakfast is here! It combines by two favorite foods, cinnamon rolls and pancakes to bring you the PERFECT combination of sweet and savory EVER! The inside is made of a fluffy buttery vegan & gluten-free mix and then taken up a notch with the addition of a sweet sugary & buttery cinnamon glaze. To make this even more of a dessert you can follow the directions to make the vegan cream cheese glaze (optional) or top the classic way with maple syrup and butter.

You can make this recipe 1 of 2 ways. First, for a quicker option you can use a pancake mix, my favorites are either King Arthur or Pamela dairy-free mix. For an even healthier option you can use a paleo pancake mix such as Birch Blenders paleo mix. Just skip the first part of this recipe, “making the pancakes” and pick up with the “cinnamon filling.”

For the full recipe though from scratch just follow the directions though to the end.

To make the pancakes you will combine, gluten-free flour, sugar, baking powder, salt, oat milk, water and melted vegan butter. A list of my favorite vegan butters to use can be found here. For the cinnamon filling its simple! Add vegan butter, brown sugar and cinnamon to a bowl, mix and voila, the perfect buttery cinnamon filling. The toppings are optional. You can either make my vegan cream cheese icing for a sweeter dessert touch, go the traditional route and use maple syrup and butter or eat plain! They are good either way. 🙂

Ingredients

  • Pancakes:
  • 1 1/4 cup gluten-free flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup oat milk – or your favorite non-dairy milk
  • 1/4 cup water
  • 1 tbsp vegan butter, melted or use vegetable oil

  • Cinnamon filling:
  • 1/2 cup vegan butter (1 stick), melted
  • 1 cup brown sugar
  • 2 tbsp cinnamon
  • Cream cheese icing (optional):
  • 4 tbsp vegan butter, softened
  • 2 oz vegan cream cheese
  • 1 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Directions

  1. In a medium bowl add flour, sugar, baking powder and salt. Add in oat milk, water and vegetable oil. Mix until just blended.
  2. For cinnamon filling melt butter and add to a bowl with brown sugar and cinnamon. Mix.
  3. Heat a skillet over high heat and grease with cooking spray or vegan butter.
  4. Drop batter by large spoonfuls onto the griddle and immediately add little drops or swirls of your cinnamon filling. Cook until bubbles form and edges are dry, flip and cook until browned. Repeat with remaining batter.
  5. Optional step: While pancakes are cooking make the vegan cream cheese icing by combining softened vegan butter, vegan cream cheese, powdered sugar and vanilla extract in a mixing bowl and beat until a frosting forms.
  6. Top pancakes with maple syrup and butter or cream cheese icing. ENJOY 🙂
