Paleo, GF, Vegan Oatmeal Cream Pie's

Ingredients
  

  • Cookies:
  • 1/2 cup gluten-free oats
  • 1/2 mashed banana
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp maple syrup
  • 1 tbsp coconut sugar
  • Filling:
  • For paleo version use: 3/4 cup coconut butter not liquid, 2 tbsp maple syrup, 1 tsp vanilla extract
  • For non paleo version use 3/4 cup Kate Hill cream cheese or your favorite vegan cream cheese, 1/4 cup powered sugar & 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350F
  2. For the cookies combine oats, mashed banana, almond flour, baking powder, baking soda, maple syrup and coconut sugar in a bowl, mix well.
  3. Scoop out dough and bake for 12-15 minutes. Dough will be soft, this is okay.
  4. While cookies are baking make the filling
  5. Paleo filling: For paleo version add coconut butter (not liquid), maple syrup & vanilla extract to a bowl. Mix, texture will be a frosting consistency.
  6. Non paleo filling: Combine Kate Hill cream cheese, powdered sugar & vanilla extract until well mixed.
  7. Once cookies are cooled frost, top with another cookie & ENJOY :)
