Gluten free & dairy free cornbread – blogmas day 20
Ever since I was a young kid I have always loved corn bread! In muffin form or in loaf form, I will search it out and eat every last crumb on my plate! Since I have been at home so much, instead of buying it, I decided to try my hands at making my own recipe. It took some time, a lot of trial and error- some batches were too dry, others too soggy, and then finally I got the recipe right!
This cornbread is not only gluten free but also dairy free for all my friends out there! It’s easy to make and stores perfectly so you can have it morning after morning for the perfect breakie! And, since the Holidays are here this dish is perfect for your Christmas dinner and will fit perfectly with every Holiday food spread. 🙂

Ingredients
- 1 cup gluten free corn meal
- 1 cup gluten free flour
- 1 TBSP baking powder
- 1/4 cup sugar
- 1/4 cup natural honey
- 1 TSP salt
- 1 cup oat milk
- 1/4 cup vegan butter – earth balance is a great option
- 3 eggs

Directions
- Preheat oven to 400F
- Spray a loaf pan with non-stick cooking spray or grease with vegan butter
- Combine all ingredients in a bowl, mixing until well combined
- Pour batter into loaf pan and bake for 20 minutes or until golden brown/cooked through. Depending on the size of your loaf pan you may need more or less baking time in the oven.
