Gluten free & Dairy free Cornbread

Ingredients
  

  • 1 cup gluten free corn meal
  • 1 cup gluten free flour
  • 1 TBSP baking powder
  • 1/4 cup sugar
  • 1/4 cup natural honey
  • 1 TSP salt
  • 1 cup oat milk
  • 1/4 cup vegan butter - earth balance is a great option
  • 3 eggs

Method
 

  1. Preheat oven to 400F
  2. Spray a loaf pan with non-stick cooking spray or grease with vegan butter
  3. Combine all ingredients in a bowl, mixing until well combined
  4. Pour batter into loaf pan and bake for 20 minutes or until golden brown/cooked through.
  5. Depending on the size of your loaf pan you may need more or less baking time in the oven.
