Vegan & Gluten-free Peanut Butter Chocolate Easter Eggs – Healthier alternative! {No Bake, GF, V}

Easter is almost here and I know what I want in my Easter basket this year! These Vegan and Gluten-free Peanut butter eggs are easy to make and are a healthier alternative to traditional peanut butter cups.

To make them it’s simple. Combine powdered sugar with peanut butter for the base and the chocolate coating is made by mixing chocolate chips (my favorites are these Enjoy life ones) and coconut oil. For materials it’s recommended to use silicone egg molds, I found mine on Amazon here but you can also use cupcake liners in a cupcake baking tray.

Substitutions?

If you don’t like peanut butter you can replace it in equal parts with almond butter, cashew butter or your favorite nut butter. For the chocolate you can use any chips you like, just make sure they are vegan & GF.

Why the coconut oil?

I add coconut oil to the melted chocolate because 1. when the chocolate cools it helps give it that perfect crisp chocolate shell and 2. it helps the melted chocolate thin out so it’s not so thick. I highly recommend this step.

For a decorative touch you can even wrap these up in some cute Easter baggies with other Easter treats or decorate with frosting and candies once peanut butter cups are completely hardened. I recommend if decorating to place in the freezer for an hour before decorating.

Ingredients

  • 1 cup peanut butter or replace with your favorite nut butter
  • 1/2 cup + 3 tbsp powdered sugar
  • 1 cup enjoy life mini chocolate chips or your favorite V & GF chocolate chips
  • 3 tbsp coconut oil

Directions

  1. In a small saucepan melt chocolate chips with coconut oil. Once melted coat the sides of your silicone trays or cupcake liners with melted chocolate making sure sides and bottom are well coated.
  2. Pop in the fridge for 30 minutes. Once hardened prepare peanut butter filling.
  3. In a small bowl add peanut butter and powdered sugar, mix until a dough forms. Scoop out dough and form into balls and add to hardened chocolate shells (keep chocolate shells in silicone liners). Press down gently until fill being careful not to break chocolate. Once filled top with more melted chocolate so all sides and top are now sealed.
  4. Place in the fridge for at least and hour.
  5. Remove from trays and ENJOY 🙂
