Heavenly Gluten-free Banana Bread Pudding {Magnolia Bakery Copycat}
Taking regular banana bread to the NEXT LEVEL with this GLUTEN-FREE banana bread pudding with banana bread slices mixed in. This dessert is my take on the classic Magnolia bakery banana bread pudding, just gluten-free! Dare I even say it’s better? Bold statement, I know, but once you try it you will instantly fall IN-LOVE with how delicious this dessert is. It’s so easy to make and so easy to finish off! You will definitely be going back for 3rds. It’s a little slice of HEAVEN and is the PERFECT sweet treat for any occasion.
To make this recipe I use my classic gluten-free & dairy-free banana bread and combine it with vanilla pudding, fresh bananas and gluten-free vanilla wafers – I use these by Kinnikinnick (they are by far the best GF vanilla wafers I’ve found).

Yields: 8 Servings.
Total Time: 4 1/2 Hours
- 1 loaf of my gluten-free & dairy-free banana bread or replace with your own recipe or box mix.
- 14 oz can sweetened condensed milk
- 1 1/2 cup cold water
- 3.4 oz box instant vanilla pudding mix
- Pint heavy whipping cream
- 3 bananas, sliced
- 1 box GF vanilla wafers – I use these by Kinnikinnick
Directions
- In a large bowl beat together condensed milk and water until well combined. Add in pudding mix and beat well for 3 min. Cover and refrigerate for 4 hours. The pudding needs to set!!
- Prepare my gluten-free banana bread while pudding is setting. Find the recipe here.
- Once pudding is set after 4 hrs, in a bowl whip heavy cream until stiff peaks form, add to pudding and fold in until no streaks.
- Assemble: In a large 8X8 or bigger glass container add layer of vanilla wafers to bottom, layer of sliced bananas, pudding mix then slices of banana bread, vanilla wafers, bananas & top with more pudding. Repeat – wafers, bananas, pudding, banana bread, wafers, bananas, pudding….until all ingredients are used.
- Finish off with fresh banana slices and little bits of banana bread! Enjoy 🙂
