The best No bake gluten-free cookie dough bites (Vegan, healthy, gluten-free, dairy-free)
Who doesn’t love cookie dough! I’m sure by now most of us have eaten it raw even though we’re not supposed to but come on! How can one resit the deliciousness encased in dough. ๐
For years it has been a mission of mine to recreate that exact Pillsbury dough just in an edible form. I have tried countless recipes and made numerous batches all with one goal, to make the best damn edible cookie dough I could. But there had to be a twist. I didn’t just want to make a boring old pile of edible dough because where’s the fun in that. It was my goal to also make it so people could easily pack with their lunches, grab from the fridge to head out the door or as a late night snack all without mess.
My second goal was to make it healthy. Yes yes I know what you must be thinking. The whole point of eating cookie dough is because of how delicious that unhealthy taste is. So to not compromise on the integrity of the dough I finally found a sticky agent (as I call it) that worked hand in hand with the ingredients so I could achieve my two goals. I found that by adding peanut butter to the mix it allowed me to make the dough into bite size balls for convenience and gave the dough a very delicious taste that worked perfectly for what I was trying to achieve.
This recipe is healthy but tastes oh sooooo good! No joke! I make it every Sunday night and it stays perfect in the fridge for the whole week so I can grab a bite whenever I want and still stick to my healthy diet! The best of both worlds!
Substitutions
This recipe is vegan, gluten-free, dairy-free and healthy so the best part is there is no need for substitutions because it fits perfectly into every ones diet! But if there are certain ingredients which you cannot eat then drop a comment below and I will try and find a suitable replacement.

Ingredients
- 1/2 cup + 2 tbsp peanut butter – fresh with no added sugars, oils or other ingredients. My favorite is to buy the no stir brands because they work perfectly with this recipe. Jiff, Teddy’s and Earth Balance Peanut Butter works great
- 1/4 cup+ 2 tbsp maple syrup
- 1/2 cup + 3 tbsp almond flour
- 2 tbsp coconut flour
- 1/2 cup Enjoy life semi-sweet mini chocolate chips– if you don’t have these replace with your favorite vegan mini chocolate chips


Directions
- In a small mixing bowl combine all ingredients minus the chocolate chips. The dough will be very soft.
- Once your dough is formed add in chocolate chips. If your dough is too soft and not sticking together then add in small amounts of almond flour at a time but be careful not to add too much.
- Carefully form individual bite size cookie balls. This batch made 12 for me. (Refer to pictures if you need help with sizing)
- Put in the fridge for an hour to help the peanut butter harden and then you can ENJOY ๐
- Store in an airtight container for up to a week. ๐

No bake cookie dough bites
