Gluten-free Banana Bread Pudding

Ingredients
  

  • 1 loaf of my gluten-free & dairy-free banana bread or replace with your own recipe or box mix link at the bottom of this printable to my recipe
  • 14 oz can sweetened condensed milk
  • 1 1/2 cup cold water
  • 3.4 oz box instant vanilla pudding mix
  • Pint heavy whipping cream
  • 3 bananas sliced
  • 1 box GF vanilla wafers - I use the ones by Kinnikinnick

Method
 

  1. In a large bowl beat together condensed milk and water until well combined. Add in pudding mix and beat well for 3 min. Cover and refrigerate for 4 hours. The pudding needs to set!!
  2. Prepare my gluten-free banana bread while pudding is setting. Find the recipe on my blog or via the link at the bottom of this printable.
  3. Once pudding is set after 4 hrs, in a bowl whip heavy cream until stiff peaks form, add to pudding and fold in until no streaks.
  4. Assemble: In a large 8X8 or bigger glass container add layer of vanilla wafers to bottom, layer of sliced bananas, pudding mix then slices of banana bread, vanilla wafers, bananas & top with more pudding. Repeat - wafers, bananas, pudding, banana bread, wafers, bananas, pudding....until all ingredients are used.
  5. Finish off with fresh banana slices and little bits of banana bread! Enjoy :)
