Healthy Zucchini Fries {Gluten-free, Vegan, Dairy-free, Easy}

Ever since I’ve created these vegan cheesy tofu cutlets I fell in-love with the seasoning mix I use and have been creating so many other recipes with it. The mix is made of gluten-free bread crumbs, Italian seasoning and nutritional yeast and is so delicious that you can use it with any dish, one of which I am sharing today!

These healthy zucchini fries are gluten-free, vegan, dairy-free and super healthy. They are the perfect low calorie alternative to regular fries that don’t compromise on taste or texture.

To make these all you need is 1 zucchini, bread crumbs – I use these vegan & gluten-free ones by Ians. This brands food is also free of peanuts, tree nuts and artificial colors. Then I add nutritional yeast to the mix for the PERFECT cheesy taste and Italian seasoning for a pop of flavor. The outside has a delicious cheesy crunch and the inside is a soft zucchini fry, the ultimate bite! Dip into mustard or your favorite sauce.

Ingredients

  • 1 zucchini, peeled & sliced into spears
  • 1/2 cup gluten-free & vegan bread crumbs – I use these by Ians
  • 1/4 tbsp nutritional yeast
  • 4 tbsp Italian seasoning
  • 1/4 cup olive oil

Directions

  1. Preheat oven to 425F
  2. Peel your zucchini and slice into spears.
  3. In a bowl add olive oil then in another bowl combine bread crumbs, nutritional yeast & Italian seasoning.
  4. Dip zucchini spears into olive oil then into seasoning mix. Spray a baking sheet with olive oil spray, add coated zucchini and bake for 15 minutes.
  5. Enjoy with ketchup, mustard or your favorite dip.
