Healthy Zucchini Fries

Ingredients
  

  • 1 zucchini peeled & sliced into spears
  • 1/2 cup gluten-free & vegan bread crumbs - I use these by Ians
  • 1/4 tbsp nutritional yeast
  • 4 tbsp Italian seasoning
  • 1/4 cup olive oil

Method
 

  1. Preheat oven to 425F
  2. Peel your zucchini and slice into spears.
  3. In a bowl add olive oil then in another bowl combine bread crumbs, nutritional yeast & Italian seasoning.
  4. Dip zucchini spears into olive oil then into seasoning mix. Spray a baking sheet with olive oil spray, add coated zucchini and bake for 15 minutes.
  5. Enjoy with ketchup, mustard or your favorite dip.
