Raw Vegan Vegetable Spring Rolls with mango dipping sauce {GF, Raw, Healthy}

Eating raw vegan is a lifestyle that has always interested me but I have never been able to commit fully to it because I really love warm foods, especially with the cooler weather approaching. But, that doesn’t mean that occasionally I won’t whip up a dish completely raw and be able to enjoy everything that this wonderful lifestyle has to offer.

Since starting my blog I have come up with a number of raw vegan dishes that have been an absolute hit on the blog and with the family. One of my all time favorites being these raw vegan pistachio bites that taste like heaven in one bite. 🙂 A close second would be this raw vegan carrot cake. I made it for Easter a few years ago and it was an absolute rave!

This recipe is super easy to prepare since it requires only a few ingredients, but as we all know, sometimes those are the best recipes. 🙂 Also, feel free to add and subtract ingredients based on your own preferences and if you have any questions then leave a comment below. 🙂


Ingredients

Wraps:

Dipping sauce:

  • 1 mango
  • 1 lime

Directions

  1. Wet rice paper and begin filling it by adding all your ingredients minus the mango and lime and making sure to leave a little room on the ends for rolling.
  2. Make your sauce by combining 1 mango without the pit and skin to a blender with the juice from one lime. Mix and serve with rolls ENJOY 🙂

  • 6 rice paper wraps
  • 1/4 bag coleslaw veggie mix
  • 5 mini tomatoes
  • Hummus – Raw vegan
  • 5 small strips zucchini
  • Micro greens
  • Dipping sauce:
  • 1 mango
  • 1 lime

Instructions
 

  • Wet rice paper and begin filling it by adding all your ingredients minus the mango and lime and making sure to leave a little room on the ends for rolling.
  • Make your sauce by combining 1 mango without the pit and skin to a blender with the juice from one lime.
  • Mix and serve with rolls ENJOY 🙂
