My 4 favorite raw vegan creations

Howdy folks, and welcome back to my blog.

Over these past few weeks I have been experimenting with the raw vegan diet and have to report back that I LOVE IT! While I don’t follow a 100% raw vegan diet, I have been implementing different recipes into my weekly meals. My favorite part about this lifestyle is that all of the deserts I make contain no added sugars, and you know what a stickler I am when trying to avoid it.

Not only have these past few weeks been full of me testing out different recipes, but they have also been full of me creating my own raw vegan delights. I have been experimenting with adding different ingredients and have been loving the result. Before sharing my own creations with you I wanted to make sure that they were perfect, so I am happy to report that today is finally the day! I have dozens more recipes coming your way over these next few months so be prepared! Have your pantries stocked and cars gassed up! Your running shoes on and yoga pants ready because you all are going to be scrambling to the store to buy the ingredients needed in today’s post. These recipes are just that good!

Raw vegan date balls

Ingredients 

  • 10 pitted dates
  • 1/4 cup peeled raw almond slivers (you may need to add more if your blended dough is too sticky)
  • 1 tsp almond extract
  • 1 tbsp – 2 tbsp cinnamon (I like a lot of cinnamon so I use more, if you don’t then use less)
  • dash of salt
  • slightly less than 1/4 cup of coconut flakes
  • blender – I use the NutriBullet

Directions 

  1. Take out your blender, I use my NutriBullet, start by adding in 10 dates to the blender container, 1/4 cup of almond slivers, 1 tsp of almond extract, 1 tbsp – 2 tbsp of cinnamon, dash of salt, and slightly less than 1/4 cup of coconut flakes.
  2. Blend until everything is combined and sticky dough forms.
  3. Sometimes depending on the size of your dates the dough can be too sticky so if this is the case add a little more of the almond slivers until the dough is sticky but workable.
  4. Once everything is combined take dough and start working it into little balls – mine are about as big as a large spoon. Repeat with rest of the dough.
  5. Place in the fridge overnight or for 3 hours before indulging in this non-guilty and very healthy treat.
  6. You can keep these up to 3 days refrigerated but make sure to cover them if you plan to keep them for more than 1 day in the fridge.

Raw vegan Vietnamese Spring rolls

Ingredients

  • 4 Spring roll wraps, my favorites are the blue dragon
  • 1 large carrot cut into skinny carrot slivers
  • 1/2 cup Corn kernels
  • 1/2 cup Chopped lettuce leaves
  • 1 bell pepper cut into slices
  • 1 cucumber cut into skinny slivers
  • Add tofu if you are looking for some protein (optional)

Directions

  1. Follow the directions on how to prepare the rice paper rolls on the back of the package you bought.
  2. Cut up all of the ingredients as I mentioned in the ingredients section.
  3. Once your rice paper is ready add all the ingredients to it and fold the paper so it forms a spring roll shape. (Refer to picture)
  4. For dipping sauce I love Braggs sesame & ginger salad dressing or spicy chili dipping sauce from Trader Joes (shown in picture).

Raw vegan Mediterranean salad with avocado

Ingredients

  • 1 bag Arugula
  • 1 bag Spinach
  • 1 head Lettuce
  • 1 Red, yellow or orange bell pepper
  • 1 Cucumber
  • A tub of mini tomatoes
  • 1 Cabbage
  • Jar of Olives
  • 1 head Radicchio
  • 1 avocado, add more if you are making a larger portion
  • 1/2 cup Almond slivers
  • 1/2 cup Raw un-roasted unsalted pistachios

Directions

  1. The amount of each ingredient does not matter, just add as much to your salad spinner as you desire.
  2. For the avocado, spoon out and dice over salad, then add the olives (if you like them).
  3. Sprinkle almond slivers and pistachios over the salad.
  4. For the dressing I love Bragg Ginger & Sesame Salad Dressing. It adds a really delicious flavor to your salad and other recipes all while keeping your meals whole 365 🙂

  • 1 tsp almond extract
  • 1 tbsp cinnamon
  • dash of salt
  • slightly less than 1/4 cup of coconut flakes
  • blender – I use the NutriBullet

Directions 

  1. Take your blender and add in 10 dates, 1/4 cup almond slivers, 1 tsp of almond extract, 1 tbsp of cinnamon, dash of salt, and slightly less than 1/4 cup of coconut flakes.
  2. Blend until everything is combined and sticky dough forms

  5. Once all the date balls are made take 1/2 cup of pistachios and grind them up in your blender. Once they are broken down, take your date balls and roll them in the pistachio powder/grains. Make sure to completely cover them.
  6. Place them in the fridge overnight or for 3 hours before indulging in this non-guilty and very healthy treat.
  7. You can keep these up to 3 days in the fridge but make sure to cover them if you plan to keep them for more than 1 day in the cold.
