Easy & Healthy Plant-Based Tomato & Cucumber Appetizer {Gluten-free, Vegan, Dairy-free, Plant-Based}

These little cucumber and tomato appetizers are DIVINE! They are perfect for a summer party because they truly take no time to prepare and require such minimal ingredients, it’s a score!! To make them all you need is a cucumber, some small tomatoes, vegan cream cheese and mustard! There’s no mixing involved, no baking or long hours waiting for them to set in the fridge.

For this recipe I use the Go Veggie vegan plant based cream cheese but you can sub in your favorite vegan blend or if you’re not dairy-free/vegan then you can replace it with regular cream cheese.

Ingredients

Yields: 10 slices

  • 1 cucumber, peeled & sliced
  • 10 cherry tomatoes
  • Vegan plant-based cream cheese – I use Go Veggie or replace with your favorite
  • Mustard

Directions

  1. Peel and slice your cucumbers and cut your tomatoes in half.
  2. Add a small dollop of cream cheese onto your cucumber slice, then mustard and top with a tomato half.
  3. ENJOY!
