Spring is here and what better way to celebrate this beautiful weather than with these nutrient packed whole 30 paleo bowls! They are not only easy to make but are also the perfect food prep so you’ll be able to munch on them all week.

Vegan options

If you are vegan then you can easily switch out the chicken in this recipe for tofu or your favorite meat substitute. Just follow the cooking instructions for your meatless option, add BBQ sauce and you’re good to go!

Paleo options

These bowls are paleo and use homemade BBQ sauce but if you don’t want to make the sauce or have your own favorite brand then you can easily switch out the sauce. Paleo or non-paleo, you can customize these bowls to fit your needs. 🙂

Here is the paleo BBQ sauce recipe that I followed. As I said you can use your own recipe or store bought brand that you prefer.


Paleo whole 30 BBQ and sweet potato bowls

To make vegan – replace chicken in this recipe with tofu for your favorite meatless substitute. Follow the cooking instructions for the meatless option, add BBQ sauce and follow the rest of the cooking instructions for the potatoes and broccoli the same.

Cook Time 35 minutes
Total Time 50 minutes
Course Dinner
Servings 4 people

Ingredients
  

  • 2 lbs chicken tenders
  • 2 large sweet potatoes
  • 1 large white onion
  • 3 tbsp extra virgin olive oil
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 tbsp chili powder
  • 1 head broccoli
  • 1 cup paleo BBQ sauce

Instructions
 

  • Preheat oven to 400 F
  • Peel and chop the sweet potatoes into 1/2 inch chunks. Chop the onion and add both to a baking pan and toss with 1 tbsp olive oil, 1 tsp salt, 1 tsp garlic powder, and 1/2 tbsp chili powder. Bake for 20 minutes.
  • Chop broccoli and toss in a bowl with 1 tsp salt, 2 tsp pepper, and 2 tbsp garlic powder. Once sweet potatoes are done cooking for 20 minutes, move to other side of pan and add broccoli to the same pan. Then cover the chicken tenders with 1/2 cup BBQ sauce and add next to broccoli. Cook for 15 minutes or until chicken is done.
  • Remove pan from oven, add on remaining 1/2 cup BBQ sauce to chicken, assemble bowls, and ENJOY 🙂
