
Gluten-free & Vegan Tacos – The EASIEST & BEST Recipe!!! {Gluten-free, Dairy-free, Vegan}
Taco’s have become a new food obsession of mine and these gluten-free and vegan ones have been my go to the past few weeks! It’s hands down the easiest taco recipe I have come across that tastes so DELICIOUS without the long cooking time!
For this recipe I used the Old El Paso gluten-free stand up shells and a gluten-free taco seasoning that my local market sells. I had no idea that the Old El Paso crunchy taco shells were GLUTEN-FREE!!! It was such a nice surprise! π Did you know they were? Leave a comment below!
You can replace the crunchy shells with your favorite gluten-free soft wraps or use lettuce wraps for an even healthier alternative. The filling is made with beyond beef meat, taco seasoning and some shredded coleslaw veggies – just the veggies without the dressing. You can top the tacos with vegan cheese, hot sauce, salsa and guacamole or you can eat them plain! They are just that good!

Yields: 8-10 tacos
- Gluten-free taco shells – I used the Old El Paso gluten-free ones
- Gluten-free taco seasoning packet
- 2 tbsp olive oil
- 8 oz vegan beef – I used beyond meat or use your favorite
- 1 bag of shredded vegetable coleslaw mix (without the dressing)
- Toppings: (optional)
- Vegan cheese
- Hot Sauce
- Salsa
- Guacamole
Directions
- In a saucepan add olive oil and beef. Cook meat until well done. Add in taco seasoning to meat (read the directions on back of taco seasoning mix to see if you need to add water to the meat). Add in 1 cup of shredded coleslaw mix (without the dressing, just the veggies). Mix.
- Assemble: Add meat mixture to taco shells, top with more shredded coleslaw veggies, hot sauce, salsa and guacamole.
