The Best Gluten-free Gooey Chocolate Chip Cookies

Ingredients
  

  • 2 1/2 cup gluten-free flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 cup white sugar
  • 1/2 cup dark brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 10 tbsp unsalted butter - softened
  • 1 cup milk chocolate chips

Method
 

  1. Preheat oven to 350 F degrees
  2. Combine gluten-free flour, baking soda and salt, mix
  3. Add in sugars, mix until well incorporated
  4. In a separate bowl combine eggs and vanilla extract. Add to flour bowl. Mix.
  5. Add in softened butter either mixing by hand or with an electric mixer on the low speed. Then add in chocolate chips.
  6. Refrigerate dough for 3-4 hours in a covered bowl. Then bake!
  7. Grease a cookie sheet with butter (IMPORTANT!) and make 1 tbsp or bigger size cookie dough balls. Bake for 10 -15 minutes.
  8. Check around the 10 minute mark to make sure they don't overcook.
  9. They will be puffy and lightly browned on the top with a gooey and soft middle. :)
