Method
- Preheat oven to 350 F degrees
- Combine gluten-free flour, baking soda and salt, mix
- Add in sugars, mix until well incorporated
- In a separate bowl combine eggs and vanilla extract. Add to flour bowl. Mix.
- Add in softened butter either mixing by hand or with an electric mixer on the low speed. Then add in chocolate chips.
- Refrigerate dough for 3-4 hours in a covered bowl. Then bake!
- Grease a cookie sheet with butter (IMPORTANT!) and make 1 tbsp or bigger size cookie dough balls. Bake for 10 -15 minutes.
- Check around the 10 minute mark to make sure they don't overcook.
- They will be puffy and lightly browned on the top with a gooey and soft middle. :)
