Vegan, Gluten free & Paleo Sweet Potato Soup

Ingredients
  

  • 3 sweet potatoes peeled & diced
  • 1 yellow onion diced
  • 1 tbsp chili powder
  • 1/2 tbsp turmeric powder
  • Pinch of salt
  • 1 tbsp olive oil
  • Sprig of oregano garnish
  • 1/4 cup water add more if soup is too thick

Method
 

  1. Preheat oven to 425 F.
  2. Peel sweet potatoes and dice. Repeat with onion.
  3. Put veggies on a baking tray, add seasoning and olive oil (minus oregano sprig) tossing to ensure even coating.
  4. Bake for 20 minutes or until sweet potatoes are soft.
  5. Remove from oven and then transfer to a blender, add water and pulse until smooth adding more water if necessary.
  6. Pour into a bowl, garnish with a sprig of oregano and enjoy. :)
