Paleo banana power muffins

Ingredients
  

  • 1/2 cup coconut flour
  • Pinch of salt
  • 1/2 tsp baking soda
  • 1/4 cup paleo chocolate chips - Hu is a great brand optional
  • 1/4 cup walnuts optional
  • 4 eggs
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 2 bananas mashed
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350 F. Grease a 12 cup muffin tin.
  2. In a mixing bowl combine dry ingredients (coconut flour, salt, baking soda, chocolate chips, walnuts), mix.
  3. In another mixing bowl combine wet ingredients (eggs, oil, honey, bananas, vanilla extract), mix.
  4. Combine wet ingredients into dry bowl, mix.
  5. Spoon batter evenly into 12 tin muffin tin.
  6. Bake at 350 F for 20 minutes or until fully cooked in center (insert toothpick and if it comes out clean then they are cooked)
  7. Cool muffins for 10 minutes and ENJOY :)
