Gluten-free & Vegan Tempeh BLT

Ingredients
  

  • 2 pieces of gluten-free & vegan bread
  • 1 block of tempeh- only use 2 slices of it for the "bacon"
  • 1 small piece of lettuce
  • 1 slice of tomoato
  • 1 tbsp vegan mayo - my favorite is veganaise
  • 1 tsp gluten-free soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 tbsp olive oil
  • 1 slice of avocado optional

Method
 

  1. Pop 2 slices of bread into the toaster
  2. Slice your tempeh into 2 small strips. Store the remaining tempeh back in the fridge for another sanwhich tomorrow! :) Add to pan along with olive oil, gluten-free soy sauce, chili powder & garlic powder. Toss to coat, then cook for 5 min on each side on medium-high or until it's nice and crispy.
  3. Take toast out, spread your vegan mayo, tempeh, lettuce, tomoato, avocado slices (optional), mayo on the other piece of toast and you're done!
  4. So simple and easy and healthy :) Enjoy!
