Easy to make vegan & gluten-free mac and cheese

Macaroni and cheese is a child’s favorite meal. Something so simple brings such a happy smile across their face.

There are so many different brands which sell different interpretations of this classic dish. Recently there’s even a few brands popping up who cater to the gluten free and vegan community. Me being the food adventurer I am of course had to try them and I was pleasantly surprised. So, I took one step further and decided to create my own vegan and gluten-free mac and cheese recipe.

When buying boxed foods there are so many ingredients in them that most times you don’t even recognize the names. So a healthier alternative is making your own. Now I know most people don’t have time to devote 2+ hours to making a recipe, which is why I’ve made this recipe about as simple as you can. In addition to keeping all ingredients reading friendly I have also made this dish wallet friendly. No need to rack up your grocery receipt with tons of expensive spices and flours when you can easily make this dish with just 6 ingredients, most of which you already have in your cupboard.


Ingredients 

Directions 

  1. In a pot cook pasta until al dente, drain and return to pot
  2. Sprinkle packet of cheese over and mix until incorporated and cheese is melted
  3. Add lemon juice, pepper, salt and garlic powder.
  4. Mix and enjoy πŸ™‚

Easy to make vegan & gluten-free mac and cheese

Ingredients
  

  • 1 packet of so delicious vegan cheddar jack cheese
  • 1 box of Barilla gluten free penne pasta
  • 1 tbsp garlic powder
  • 1 tsp freshly squeezed lemon juice
  • 1 1/2 tsp ground pepper
  • 1 1/2 tsp salt

Instructions
 

  • In a pot cook pasta until al dente, drain and return to pot
  • Sprinkle packet of cheese over and mix until incorporated and cheese is melted
  • Add lemon juice, pepper, salt and garlic powder.
  • Mix and enjoy πŸ™‚

Notes:

  1. This pasta also tastes delicious the next day heated on a skillet with olive oil
  2. Add caramelized onions for a more savory dish
  3. Store in the fridge for up to 5 days
  4. Add this mac and cheese to the top of pizza dough for delicious mac & cheese pizza
  5. The brand of cheese I use is very important to this recipe so I highly recommend not switching brands.
