No bake Gluten-free, Vegan & Paleo Cookie Dough Bites – 4 ingredient dessert!

These NO BAKE vegan, paleo & gluten-free cookie dough bites are easy as cake to make! After the wonderful response from my previous no bake gluten-free cookie dough bites (Vegan, healthy, gluten-free, dairy-free), I decided to go back to the drawing board and take this recipe up a notch. This go around I replaced the peanut butter with almond butter and used less ingredients to make these bites EVER BETTER! Plus, compared to my previous cookie dough bites these are also PALEO. ๐Ÿ™‚

These cookies are an almond butter base. To make the dough I combined almond flour, maple syrup, almond butter and my favorite Hu paleo chocolate gems. Give them a little mix, pop in the fridge and you’re done! For a more decorative touch I dipped in even more chocolate and finished off with some sprinkles. ๐Ÿ™‚

This recipe is a lot of fun to make and takes only a few short minutes to prepare.

Ingredients

  • 3/4 cup almond flour
  • 3 tbsp maple syrup
  • 1/3 cup almond butter
  • 1/4 cup Hu paleo chocolate chips, I cut mine in quarters to make smaller.
  • Optional: More Hu chocolate chips for dipping bites in (mix 1/4 cup chocolate chips with 1 tbsp coconut oil, melt)
  • Optional: Sprinkles

Directions

  • If cutting your chocolate chips in quarters to make smaller, do this step first.
  • Mix all ingredients together, pop in the fridge for 30 minutes to harden.
  • Optional: Roll in melted chocolate (Hu chocolate chunks with 1 tbsp coconut oil) or in sprinkles for added sweetness & color.
  • ENJOY ๐Ÿ™‚

Course: Dessert

Ingredients
