
Gluten-free, Vegan & Paleo Fudgey Brownies
One of my favorite things about the winter is baking! Staying indoors in my nice warm house, reading a book, drinking a cup of cocoa, baking sweets, and enjoying the fresh blanket of snow outside, are my favoirte ways to spend the cold winter months.
And one of my favorite things to bake is BROWNIES!!! Who’s with me! Comment below your favorite thing to bake.
As someone who is gluten-free and occasionally dairy-free and or vegan, I wanted to create a brownie recipe that will suite not only Celiac’s but vegans, paleo and dairy-free eaters, and a recipe that also tastes AMAZING!
To make this recipe you only need a few simple ingredients and 40 minutes of your time! They do need to set for 8 minutes before eating, this step is VITAL to the success of this recipe.

These past few months have been very hectic, between my Etsy, school, work, the Holidays, Covid and so many other things, I decided to take a step back from my blog to devote time to other areas in my life. With that being said, I did miss blogging and for the New Year it was a goal of mine to re-launch my blog!!! I am hoping to upload 1 post per week and send out 1 newsletter a month.

Ingredients
Yields 9 brownies
- 1 1/2 cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1 cup coconut sugar
- 1/4 cup melted coconut oil
- 2 eggs ** Vegan version sub out for 2 flax eggs** 2 tbsp flax meal + 6 tbsp water – refrigerate for 30 min
- 1 tsp vanilla extract
- 1/4 cup oat milk
- 1/4 tsp baking soda
- 1 tsp salt
- 1/2 cup enjoy life vegan mini chocolate chips

Directions
- Preheat oven to 350F
- In a bowl combine flour, cocoa powder & sugar, mix well. Add in coconut oil, eggs (or flax eggs), vanilla extract, oat milk, baking soda & salt. Combine. Add in vegan mini chocolate chips, fold into the batter.
- Grease an 8X8 brownie pan with cooking spray or parchment paper, add in batter and bake for 25-30 minutes or until a toothpick comes out of the center clean.
- Let sit for 8 minutes before slicing. Important or else they will fall apart.
- ENJOY 🙂
