Paleo, Vegan & Gluten Free Chocolate Chip Cookies

Ingredients
  

  • 6 TBSP melted coconut oil
  • 1/2 cup coconut sugar
  • 2 TBSP oat milk
  • 2 tsp vanilla extract
  • 2 cups almond flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup Enjoy Life Chocolate Chips - you can use morsels or chips

Method
 

  1. Preheat oven to 350F and line a cookie baking tray with parchment paper or cooking spray
  2. In a large bowl add almond flour, coconut sugar, baking soda, baking powder and salt
  3. In a separate bowl add coconut oil, oat milk, and vanilla extract, mix and then add to dry ingredients. Stir until combined.
  4. Add in your chocolate chips, use more or less than the measurement I provided. If you like them extra chocolatey then use MORE!!!! :)
  5. Bake for 8-10 minutes, don't go over because then they will not be as soft.
  6. Let them COOL for 5 minutes before eating or else they will fall apart. Trust me, it will be worth the wait!
