Gluten-free & Paleo Cinnamon Granola

Ingredients
  

  • 2 cups gluten-free oats
  • 1/2 cup raisins - add more if you like
  • 1/4 cup dried goji berries optional
  • 1/2 cup dried quinoa
  • 4 tbsp or more cinnamon depending on your preferences
  • 2 tsp salt
  • 3 tbsp coconut oil
  • 1/4 cup raw honey
  • Other optional additions: Matcha powder turmeric, cocoa powder, chocolate chips, m&m's or dried fruits (add after baking)

Method
 

  1. Preheat oven to 350 F
  2. Add your granola and the rest of the ingredients to a large bowl and mix until everything is well coated and combined.
  3. Lightly drizzle coconut oil onto your baking tray and evenly spread out your granola mixture. Bake 20-25 minutes or until it's crispy and lightly browned. Can be baked less if your prefer granola more chewy and less crispy.
  4. ENJOY :) Store for up to a week in an airtight container.
