Gluten-free & dairy-free ham, cheddar cheese and chive scones

Ingredients
  

  • 2 1/2 cups gluten-free flour
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup brown sugar light
  • 1 stick vegan butter cold. I use earth balance
  • 1 large egg
  • 1/2 cup dairy-free yogurt - I use plain Coconut yogurt
  • 2 tbsp oat milk
  • 4 ounces dairy-free cheddar cheese shredded
  • 4 ounces ham diced
  • 3 scallions chopped

Method
 

  1. Preheat oven to 400 F. Coat a baking sheet with cooking spray or butter (vegan).
  2. In a large bowl add flour, salt, pepper, baking powder, baking soda and brown sugar, combine. Cut the butter into small cubes and work into flour mixture until it resembles a coarse meal. Set aside.
  3. In a small bowl whisk together egg, milk and yogurt, beating to combine. Add liquid to dry and stir until everything is well mixed.
  4. Add in cheese, ham and scallions folding them into the dough with a spatula.
  5. Take your dough and form 8 circles and then transfer them to your greased baking sheet.
  6. Bake for 15-20 minutes or until the tops are lightly golden brown.
  7. Cool for 5 minutes and serve. ENJOY :)
