Avocado Chocolate brownies {paleo, dairy-free}

Happy November 1st everyone! I am over the moon happy that the Holidays are finally here and that Thanksgiving and Christmas are just around the corner.

If you’ve be following me for sometime you know just how much I love this time of year. In addition to it being my birthday month, it’s also the start of the snow countdown! The first day it snows is one of my favorite days! It doesn’t have to be a huge 10 foot snowstorm, just a few flurries that fly by my face are all I need to smile. While I’m on the topic of smiling and being happy, just a few weeks ago I reached 600 followers! While this number may not seem like such a huge number, to me it’s everything! So, to show my followers just how much I care, I am hosting a giveaway on my blog which starts today! And…… drum roll…..I will be giving away a brand new paleo and gluten free cook book!

Before getting into the giveaway I also want to mention that I have created a FREE downloadable guide which can be downloaded via the banner located at the top of my blog! This FREE guide will help everyone with baking gluten-free, paleo, and healthy this season! I’ve been working so hard on it, hence why my posting has been iffy lately, and it’s finally completed, so I would love if you downloaded it and gave it a read! Okay, now that those HUGE announcements have been shared it’s time to make your mouth water with these yummy avocado brownies. Yes you heard that right! Avocados in brownies? Who would’ve thought that they would taste oh so good and be oh so good for you!

Ingredients

Directions

  1. Preheat oven to 350 degrees F
  2. In a blender combine avocado, applesauce, maple syrup and vanilla
  3. Transfer to a bowl and whisk in eggs
  4. Add coconut flour, cocoa powder, sea salt, and baking soda, stir until everything is well incorporated
  5. Grease a 8 x 8 pan with parchment paper, scoop mixture into it and bake for 20-25 minutes.
  6. Brownies will be light, fluffy, and delicious!

Equipment

  • Blender/ Food Processor

Ingredients

  • 1 large avocado
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup – use 1/3 cup for less sweet
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • Bonus: 1 scoop of paleo chocolate protein powder for a muscle boost!

Instructions

  • Preheat oven to 350 degrees F
