The ultimate gluten-free baked brie with cranberries and toasted almonds

Ingredients
  

  • 12 ounce wheel of Brie cheese with or without rind- depends on preferences.
  • 1/3 cup unsweetened cranberry juice
  • 2 tbsp brown sugar
  • 1/3 cup frozen or fresh cranberries
  • 1/3 cup dried cherries sweetened or unsweetened
  • 1 sheet gluten-free puff pastry rolled out measuring 12 x 12 - GeeFree is my favorite brand.
  • 1/3 cup sliced toasted almonds. Pre-seasoned with honey from Trader Joes are the best.
  • 1 egg beaten - for egg-wash
  • 1 tbsp water

Method
 

  1. Remove frozen puff pastry from freezer at least 1 hour prior to baking. Lay it flat on the counter.
  2. Add cranberry juice to a saucepan and bring to a boil, then add in brown sugar, stir.
  3. Add cranberries to saucepan and cook on medium for 4 minutes. Add dried cherries. Stir. Remove from pan, place in a bowl and place in the fridge for 1 hour.
  4. For egg wash- In a bowl whisk egg and water.
  5. On a well floured surface, roll puff pastry into 12x12 square, place brie in center, top with cranberry sauce, place all of the cranberry mixture on top, add half of the almond slices.
  6. Fold up corners of puff pastry brushing each piece with egg wash (holds dough together). Continue until brie is all wrapped up.
  7. Transfer to a baking dish, chill for 20 minutes uncovered in the fridge. Preheat oven to 400F.
  8. Bake brie for 18-22 minutes or until the pastry is golden brown and puffed. Check around 15 minutes to make sure the pastry isn't getting to dark. If it is place a piece of tin foil over top for remaining cooking time.
  9. Remove from oven, top with remaining almonds.
  10. Cool for 10 minutes then serve!

Notes

  • For this recipe you can either make your own puff pastry or use the store-bought one. My favorite brand is Gee Free.
  • Make sure to tightly wrap the brie in the dough because the brie will leak out if not carefully wrapped.
  • Making sure to let the brie sit for 10 minutes once out of the oven is important to 1. allow it to cool and 2. let the brie settle and solidify a tad.
