Gluten-free & Vegan Tempeh BLT

Ingredients
  

  • 2 pieces of gluten-free & vegan bread
  • 1 block of tempeh- only use 2 slices of it for the "bacon"
  • 1 small piece of lettuce
  • 1 slice of tomoato
  • 1 tbsp vegan mayo - my favorite is veganaise
  • 1 tsp gluten-free soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 tbsp olive oil
  • 1 slice of avocado optional

Instructions
 

  • Pop 2 slices of bread into the toaster
  • Slice your tempeh into 2 small strips. Store the remaining tempeh back in the fridge for another sanwhich tomorrow! :) Add to pan along with olive oil, gluten-free soy sauce, chili powder & garlic powder. Toss to coat, then cook for 5 min on each side on medium-high or until it's nice and crispy.
  • Take toast out, spread your vegan mayo, tempeh, lettuce, tomoato, avocado slices (optional), mayo on the other piece of toast and you're done!
