Pop 2 slices of bread into the toaster
Slice your tempeh into 2 small strips. Store the remaining tempeh back in the fridge for another sanwhich tomorrow! :) Add to pan along with olive oil, gluten-free soy sauce, chili powder & garlic powder. Toss to coat, then cook for 5 min on each side on medium-high or until it's nice and crispy.
Take toast out, spread your vegan mayo, tempeh, lettuce, tomoato, avocado slices (optional), mayo on the other piece of toast and you're done!
