Raw Vegan Coconut Date Bites

Ingredients
  

  • 8 pitted dates - raw uncooked, no additives
  • 1/4 cup almond slivers - add more if dough is too sticky
  • 2-3 tbsp coconut flakes - unsweetened no additives
  • 1 tsp almond extract
  • A plate coated with more coconut flakes for rolling

Equipment

  • Blender

Method
 

  1. Add all ingredients to a blender. Blend until a dough forms. If dough is too sticky then add more almond slivers.
  2. Shape dough into bite size balls, roll in more coconut flakes and place in a covered container in the fridge for 2-3 hours.
  3. Remove and ENJOY :)
  4. Notes: Keep in an airtight container for up to 5 days in the fridge.
