Kale Salad

Ingredients
  

  • 1 head of Kale washed
  • 1 red pepper- diced small
  • 2 orange carrots- shredded
  • 1 beet- peeled and diced
  • 1 lemon
  • Optional: Fresh Mozzarella- sliced

Method
 

  1. In a bowl clean the kale well by soaking and rubbing the leaves
  2. Break kale apart and add to a bowl.
  3. Shred carrots, dice peppers, and peel and dice your beet.
  4. Add to a bowl with prepared kale, mix to combine and then top with lemon juice
  5. Optional: enjoy with freshly sliced mozzarella

Notes

*Be sure to clean the Kale well!
*Be careful when preparing your beets because THEY STAIN!
