{Gluten-free, dairy-free, paleo, whole 30, vegan, heathy}To make vegan - replace chicken in this recipe with tofu for your favorite meatless substitute. Follow the cooking instructions for the meatless option, add BBQ sauce and follow the rest of the cooking instructions for the potatoes and broccoli the same.
Peel and chop the sweet potatoes into 1/2 inch chunks. Chop the onion and add both to a baking pan and toss with 1 tbsp olive oil, 1 tsp salt, 1 tsp garlic powder, and 1/2 tbsp chili powder. Bake for 20 minutes.
Chop broccoli and toss in a bowl with 1 tsp salt, 2 tsp pepper, and 2 tbsp garlic powder. Once sweet potatoes are done cooking for 20 minutes, move to other side of pan and add broccoli to the same pan. Then cover the chicken tenders with 1/2 cup BBQ sauce and add next to broccoli. Cook for 15 minutes or until chicken is done.
Remove pan from oven, add on remaining 1/2 cup BBQ sauce to chicken, assemble bowls, and ENJOY :)
