Paleo banana power muffins

Ingredients
  

  • 1/2 cup coconut flour
  • Pinch of salt
  • 1/2 tsp baking soda
  • 1/4 cup paleo chocolate chips - Hu is a great brand optional
  • 1/4 cup walnuts optional
  • 4 eggs
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 2 bananas mashed
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350 F. Grease a 12 cup muffin tin.
  • In a mixing bowl combine dry ingredients (coconut flour, salt, baking soda, chocolate chips, walnuts), mix.
  • In another mixing bowl combine wet ingredients (eggs, oil, honey, bananas, vanilla extract), mix.
  • Combine wet ingredients into dry bowl, mix.
  • Spoon batter evenly into 12 tin muffin tin.
  • Bake at 350 F for 20 minutes or until fully cooked in center (insert toothpick and if it comes out clean then they are cooked)
  • Cool muffins for 10 minutes and ENJOY :)
