Banana bread

{gluten-free, dairy-free}

Ingredients
  

  • 1/2 cup vegetable oil
  • 1 cup dark brown sugar
  • 1 tbsp white sugar
  • 3 eggs
  • 4 medium bananas - mashed
  • 2 1/4 cups gluten-free flour
  • 1/2 tsp baking soda
  • 2 tsp ground cinnamon
  • 3/4 cup dairy-free chocolate chips

Instructions
 

  • Preheat oven to 350 F. Grease a loaf pan with butter or cooking spray
  • In a bowl combine oil and sugar (brown and white).
  • Add eggs, mixing until well blended.
  • Add mashed bananas, gluten-free flour, baking soda and cinnamon. Mix
  • Add in chocolate chips- stir
  • Scoop mixture into greased pan and bake for 65-75 minutes or until toothpick comes out clean in the center and top is crispy golden brown. Place a sheet of tinfoil over top after 1 hour of cooking to prevent excessive browning.
  • Allow bread to cool for 10 minutes, slice, and enjoy. :)
